Japanese cuisine is about elegant presentation, delicate flavours and requisite fresh ingredients. Even daily snacks like sushi demand the choicest ingredients for it to shine - not surprising, since more than being a food, they really are  bite-size works of fine art.

Every respectable buffet restaurant here would feature at least a modest selection of sushi and Japanese food. But at Todai, an international seafood buffet outfit, you get 20 types of individually crafted sushi including original creations like Merlion and Volcano. It is a pretty sight to behold - a parade of colours and textures that taste as good as they look.

Tempura is another much-loved treat in Japanese buffets here. Good tempura should be light and fresh-tasting rather than heavy and laden with oil. It is a versatile dish that can be made with anything from onions to squids and fish. At Todai, they have taken to using ginseng - slivers of the root are deep fried in tempura batter and drizzled over with honey to create an interesting blend of sweetness with just a hint of bitterness.
